Hello my darlings! Have a nice month! I can't possibly believe that it is May already - it seems to me that time is flying by so fast and the weather is changing even faster. As we speak, it is around 30 degrees Celsius in Athens and everyone is at the beach... I have mixed feelings about this situation since, one the one hand, I adore warm and sunny days but, on the other hand, I wanted to enjoy spring a little more instead of jumping right into summer.

With warm weather also comes the dreaded image of our bodies in teeny tiny clothes after a long winter. Maybe we overate during Easter break, maybe we didn't devote enough time to working out. And maybe we just like to beat ourselves up and always think we are not good enough. In my opinion, every body is beautiful as long as the person is healthy and happy. We need to love ourselves and our bodies, not just on the surface level, but from inside out.

It took me a while to realize that the type of food we choose to fuel our bodies is critical. Yes, you could eat very few calories of only junk food and lose weight. But is it good for you? Is it nourishing your body? Is it providing you with the right amount of energy so that your body and brain can function properly? Probably not.

Healthy eating - and not dieting - is not a temporary solution. It is a lifestyle, a state of mind. And, believe me, it is not all fun and games mainly because we are constantly surrounded by temptations. And don't even get me started on those foods that double as "good for you" but are rather unhealthy.

Anyway, today I wanted to share some healthy recipes for breakfast, lunch, dinner and snack in order to prove to you that eating clean can actually be really tasty and fun!


Sweet Apple Snack

My first idea is so simple and easy but so delicious. All you need is a teaspoon of organic honey, a pinch of cinnamon and an apple. Simply, mix the honey and the cinnamon together, cut the apple into slices and dip them in the sauce. A quick and easy snack that you will love if you have a sweet tooth.

Sweet Spinach Pancakes


My second recipe might scare some of you, but have some faith in me 😉 Just blend together some oats, some spinach, some almond milk, some cinnamon and one banana and throw the mix in the frying pan. 


Just calculate the portions yourself, depending on how thick or thin you want your mixture to be. Serve with fruit, nuts, and honey (as seen in the header). Believe me, it tastes so good, especially if your bananas are ripe enough.



HEALTHY RECIPES HEAVEN ONLINEIf you know me personally, then you know that I could live of off pasta and be perfectly content. I have a deep love for Italian pasta and Asian noodles of any kind so, when I heard about this healthier pasta version, I knew I had to give it a go. Zoodles are basically zucchini "stripes" that resemble noodles.
Usually, people use a spiraliser for a quick fix, but I didn't have one so I used a peeler.

Keep in mind that once you throw them in the pan they are going to shrink so you need to add more in order to feel up your plate. Here, I paired them with ground meat and basmati rice and I sprinkled a bit of cheese over top to add more flavor. You could really pair them with anything though!

Pizza Stuffed Zucchini


This one offers all the flavor of a pizza without the added carbs and calories from the bread. Just cut half - slices in the zucchinis (not dicing them all the way through) and fill the gaps with your favorite pizza toppings. Cheese, pepperoni, tomato etc. Dip your bites in tomato sauce for more flavor!
